Introduction
The following tasks are to be performed by staff in the time leading up to and during closing.
Deli Table (90 min before closing)Clean the Panini Press
Wipe off the Toaster
Clean and Sanitize the Deli Table
Bathroom (90 min before closing)Clean hand rails and door knob
Clean Toilet paper and paper towel dispensers
Clean the sink and toilet
Wipe down the base of the toilet.
Once the cup is marked, hand it off to the barista or place in queue.
Clean and sanitize Espresso Machine counter
Restock toilet paper and paper towels
Empty the Trash Can
Counters (1 hr before closing)Clean and sanitize Prep Sink
Wipe down Ice Machine
Clean and sanitize the Blender
Wipe under Syrup Bottles
Clean and sanitize Espresso Machine counter
Clean and sanitize Drip Coffee counter
Clean and sanitize cashier counter
Clean and sanitize the Microwave
Deploy fresh towels
Seating Area (1 hr before closing)Clean and sanitize all tables
Wipe down all chairs
Clean glass panels
Empty and wipe down the trash cans
Dust surfaces as necessary
Empty the outside trash can
Dishes (30 min before closing)All utensils on Deli Counter
All cups and utensils for Espresso Machine
Blenders and their tops
Steaming Pitchers, Measuring Cups, and Thermometers
Coffee Brewing Baskets
Decaf Filter and Funnel
Coffee Air Pots
Wash any empty Pastry Trays
Bakery Case (30 min before closing)Remove everything from Bakery Case
Clean the Bakery Case thoroughly
Wash the glass
Wrap the pastries
Turn off the light
Espresso Machine (During closing)Empty trash can and grounds
Flush both sides with soap then again with water
Wash Espresso Portafilters
Wipe down espresso machine and counter
Wash the front trays
Floors (During closing)Sweep the Service Area
Sweep the Guest Area
Sweep the Bathroom
Remove all dirty towels
Mop the Service Area
Mop the Guest Area
Mop the Bathroom
Empty Trash Can in Service Area
